Cheesy Chicken & Wild Rice Soup 

Liz shared this recipe at a church potluck in Fall 2007.

1 pkg (6 oz) Uncle Ben's Long Grain & Wild Rice Mix (Fast Cook Recipe)
4 cups milk
1 can (10 3/4 oz) condensed cream of potato soup, undiluted
8 oz Velveeta, cubed
2 cups chicken breast, cooked & cubed
1/2 lb sliced bacon, cooked & crumbled (optional)

I also add:
*1/2 - 1 cup shredded cheddar (until soup reaches desired thickness)

In large saucepan, prepare rice according to package directions. 
Stir in milk, chicken, soup & cheeses; mix well.  
Cook and stir until cheese is melted.  Garnish with bacon, if desired.
